Yet another quick, easy meal.
1/2 bag of lettuce (romaine, spring mix or other "leafy" lettuce)
10-15 grapes (You can use any grape; I use red for contrast with romaine and green to contrast with spring mix for color.)
1/2 c slivered almonds -- the ones that are bare and look like a fork tine, not the circular flat ones (though they can substitute)
3 tbs balsamic vinaigrette dressing
Instructions:
- Toast almonds by sprinkling them evenly across a dry skillet on medium to medium high heat, tossing with turner occasionally.
- Meanwhile, break up lettuce (if needed) and place in large salad bowl.
- Cut grapes into halves, thirds or fourths -- whatever you like and place in bowl with salad
- Add with balsamic dressing. If the dressing is too bitter, I first place in a small glass bowl and mix with sugar to taste before adding to salad.
- When almonds are finished toasting (most should be light brown), put in bowl with other ingredients.
- Toss and enjoy :)
